Love it with Thai Chicken Satay. 2 tablespoons peanut oil 1 onion, finely chopped 2 cloves garlic, minced 1/2 teaspoon crushed red pepper 1/4 cup fresh lime juice 1/4 cup light soy sauce 2/3 cup crunchy or smooth peanut butter 1/3 cup coconut milk 1/4 cup coriander, chopped Cook onion and garlic in the peanut oil till translucent. Add all other ingredients and simmer 10 minutes.
